These Healthy Cottage Cheese Pancakes are light, fluffy, and packed with protein — the perfect start to your morning! Made with wholesome ingredients like oats flour and cottage cheese, they deliver the comfort of classic pancakes without the guilt.

Ingredients
2 eggs
1 tbsp butter
1 tbsp sugar
¾ cup cottage cheese
⅓ cup milk
1 cup oats flour
1 tsp baking powder
Preparation
Step 1
Blend the Wet Ingredients
In a food processor or blender, add the eggs, melted butter, and sugar. Blend until smooth and slightly frothy.
Step 2
Add the Dairy
Add the cottage cheese and milk to the mixture. Blend again until creamy and well combined.
Step 3
Add the Dry Ingredients
Add the oats flour and baking powder to the wet mixture. Pulse a few times until the batter is smooth. Avoid over-blending — you want it light and fluffy!
Step 4
Cook the Pancakes
Heat a non-stick pan over medium heat. Lightly grease it with butter or oil. Pour about ¼ cup of batter per pancake.
Cook 2–3 minutes per side, until golden brown and set in the center.
